INGREDIENTS

1 ½ cups packed of grated cauliflower
1 cup grated carrot & sweet potato
1 tbsp grated ginger
1 tsp cumin powder
½ tsp garlic powder
1 tsp coriander powder
1 tsp turmeric powder
½ cup besan flour plus ¼ cup more if you need it.
1 tbsp olive oil
½ Cup chopped cashews
½ tsp each of salt and pepper to taste

METHOD

Heat the oven to 200 degrees.

Mix all ingredients together in a bowl by hand until the mixture is sticky and forms balls.

Line a baking tray with baking paper

Make 10 -12 balls and place on the baking paper and lightly spray with oil.

Bake in the over for 30 minutes or until cooked.

These can also be cooked in oil in the pan, however baking is a much healthier and tastier version.

Serve with a mango chutney and a dollop of coconut yogurt or cashew cheese

This combination creates a complete plant based protein and also the sweet potato is a great fibre for our little friends in the gut.

Cauliflower is a hero when it comes to star power with its anti carcinogenic properties and turmeric is anti inflammatory.
